Delicious, simple pumpkin loaf on a cool autumn day

‘Tis the season for decorative gourds and baked goods! Autumn’s my favourite time of year. Rich hues of red, orange, and brown cover cold concrete; blanket scarves and baked goods warm me to my soul; and hermiting with a stack of books will never be judged when there’s a citywide deluge.

I recently spent one cozy Sunday baking up a storm. The result? A pumpkin loaf that is delectably spicy and moist. I followed the Tasty Kitchen‘s recipe, with a few minor adjustments: I used coconut oil rather than canola or vegetable. I made two loaves instead of three, and had to adjust the baking time slightly by about 15–20 minutes. And, while I didn’t make this mod myself, I’d recommend adding a bit more cinnamon, clove, and nutmeg to the mix. I didn’t find the end result was quite as flavourful as I’d hoped. I’ll provide a rough range that I think will work, depending on how spice-filled you like your pumpkin treats.

PUMPKIN LOAF
  • 3 c brown sugar
  • 3 ⅓ c all-purpose flour
  • 2 tsp baking soda
  • ½ tbsp baking powder
  • 1 ½ tsp salt
  • 1–2.5 tsp nutmeg
  • 1–2.5 tsp ground cloves
  • 1–2.5 tsp cinnamon
  • 4 eggs
  • 1 can pumpkin purée (15 Oz.)
  • 1 c coconut oil, melted
  • 1 c water

Preheat oven to 350 F. Mix your dry ingredients (sugar, flour, baking soda, baking powder, salt, nutmeg, ground cloves, cinnamon) all together. Add your wet ingredients (eggs, pumpkin purée, coconut oil, and water) all at once, and mix very well. No lumps or streaks of dry ingredients! Use a rubber spatula to get all your batter into a greased loaf pan. When you’re ready, pop ‘er in the oven.

As mentioned, I made two loaves rather than the recommended three. If you have three loaf pans, go for it. I have one, and was able to make it work by adjusting bake time. If you make three, the recommended bake time is 45–60 minutes. With two, I recommend roughly 1 hour and 15–20 minutes. When the loaves are done, you should be able to stick a skewer in and have it come out clean. Let your loaf cool before you completely devour it, and enjoy! If you’re feeling up to the task, I imagine this loaf would be delicious with a little cream cheese frosting.
